I was checking out my brakes and noticed that my rear brakes are getting a little thin. It looks like they are just about touching the brake sensor. I do not have any lights on the dash yet but I’m wondering how long I might have before the light comes on and I start damaging my rotors?

Does the light come on when the pads wear down to where the wires come out of the sensor?

I’ve been working on cars/trucks for years, but new to Touareg’s so I’m just curious about how they work. :)

Yes, the light light should come on when the wire in the wear pad is exposed and gets cut by the rotor.

Some people get two sets of pads to one pair of rotors but the wear tolerance on the rotors is very small - I can't remember the exact figure [something like 1 or 2 mm per side of each rotor] so you will probably need new rotors as well as pads.

You can only determine this by measuring rotor thickness.
