P0087 (another one) - all new fuel system and still coming up

The entire fuel system was cleaned / replaced a few months ago (HPFP, in-tank fuel pump, 6 x injectors, fuel filter housing, pressure regulators...).

I still get a P0087 under hard acceleration from low RPM. I just recently got a VCDS and datalogged a couple things. It seems that at least 1 injector (#3) has an issue that causes the fuel pressure to drop momentarily.
I am not entirely sure what that means from a technical standpoint, but the correlation seems to be there. The mechanic is away for 2 weeks, so I'm wondering if there is anything I can do in the meantime to narrow down / confirm the issue.

Some internet reading seems to point towards the return lines, they look tight and in place properly, but that's about the extent of my mechanical troubleshooting abilities.

so let's try this again, I tried to reply 3 times already, it doesn't seem to be working.

but not where it comes from!
A code will never tell you where it comes from.... it provides hints to allow further diag or troubleshooting.
So the FF data you're showing, points to ~2500 RPM at high load.
Your next move should be to do proper logging (including rpm and better graphing) and also verifying low pressure fuel delivery. It sounds like everything was thrown at it recently, so there's no reason for any of these components to have already failed, but now you need to start at the fuel tank and work your way up to the injectors.
