I was playing with VCDS last night for a few hours last night and I couldn't find any settings to disable the stupid voice command button into just a MUTE button and also is there a way to disable ESC completely for when winter rolls around so I can have some fun in the snow? Thanks in advance

Not sure what for you want to disable voice command button…so no comments here.
As for switching off ESC – do RTFM, section describing Off-road driving. Per my recollection it speaks about assistance systems switching off (ESC, ASR) for different situations in off-road driving.
I’ve (as many other CT members) done doughnuts in my T3 and had a good fun in the snow.
