I would like to use Bluetooth audio streaming, but turn off hands free. There is an option in the menu to disconnect, but it keeps re activating. I prefer my jawbone headset over the hands free, but the VW keeps on activating and "trumping" my jawbone. Drives me nuts. Thoughts?

I think you will need a separate device for streaming music such as an iPod touch, then delete the pairing for your smartphone. Pretty sure it's all or nothing but not positive.
