Found out it is the differential. I accidentally rode off a high curb (approx 10") and the differential symbol now cycles through the messages I have. Headlight range control and check brake pads.

Ouch, but strange that it would trigger the differential issues, I mean 10" isn't that far... Have you tried shifting from 4HI>4LO>DIFF-LOCK and back to 4HI?
 
Don't drive the car on tarmac with the diff locked. You are at risk of seriously damaging the transmission.

The diff lock is only intended to be used in mud or snow where the wheels can slip and slide and can compensate.

Otherwise on hard surfaces you get transmission wind-up and that's what does the damage.

To a new Touareg/4X4 driver that is a very important and valid point.
 
You would only get the diff lock to work if you physically shifted it into Low range. That is not easily done unless you are stopped and shifted to neutral first. I think this is just a coincidence then anything else. There is no reason for it to trigger that message just running off a curb unless you scraped and did some sort of damage to the transfer case in the process.
