Is it possible, after removing the rear propshaft. to use the car as front-wheel drive?
I know this has been done on other cars

Theoretically yes, but likely to cause major damage to the 4WD transfer box.

On other cars, it's generally only done on cars which are basically FWD but with a power take-off and clutched mechanism for the rear drive.

The transmission is a rear wheel drive based transmission (being used in my Corvette conversion). I think you are referencing a golf awd that is based on a front wheel drive transmission.

If you want a front wheel drive car, sell the Touareg and buy a Golf.
