Need a full size spare for a trip to Alaska. Have the tire, a 265 50R 19. Shopping for a single rim, and found a 2014 Cayenne wheel. The only difference I've found is the offset numbers: the Cayenne spec is an ET59 offset, the 2014 Touareg ET60. Is this difference a single millimeter here, and not enough to make any real difference? Or should I keep shopping?

Millimeter offset won't change anything. I'd be more concerned about the height than the protrusion. Getting a tire that has equivalent wear to the ones currently on your car + any potential difference in the height of 1 of the "19 inch" rims vs. the other "19 inch" rim.

On top of that, many on here will probably agree that all 5 tires should be the same brand and model tire (and obviously size goes without saying).

1mm difference in offset, as said above, will not matter. More extreme differences in offset can affect fender rubbing/brake caliper clearance.
