Not an easy job by any mean, but me and a friend were able to change both O2 sensors with the V10 in the touareg.
We were going to clean the intake manifold but after removing the passenger side one, we decided that it wasn't worth the effort for the amount of gunk that was in them.
So for passenger side (right), fuel filter housing off. We had the intake manifold off but just because we were going to clean it. I think you might be able to reach without taking it off. Reach with arm through the center where the fuel housing sits. Lots of room for a stubby 22mm or 7/8. Fairly easy.
For driver side (left): from underneath. Remove heatshield on the left (driver) side of transmission that protects the shifter linkage (3 bolts, heatshield is about the size of a hand, right next to the cat).
Undo shifter linkage for additional room (2 bolts + 1 lockwasher and nut). Get your longest 22mm or 7/8 open end wrench in there and you will be able to crack the sensor. After that I was able to get my arm in there up to my elbow and unscrew the connector by hand. If your arm is too big you might not be able to get it in far enough.
We ran into a number of issues that were all solved in the end. Check engine light is gone!
