Hi De Valk and welcome,
Both filters are very simple to replace, assuming you have basic tools to do it.
Do a search online, lots of infos and videos, the cabin filter is the one that require a bit of flexibility to access, take your time so you dont break anything pulling the panel.
Avoid the dealership for small stuff, good luck.
 
The engine air filter is fairly simple- no tools required. It requires a little finesse to put the air box back together. It's a little easier if you remove the MAF sensor connector, but not required.
The cabin air filter is awkward and difficult to find the first time, requires a Torx driver- T-15? Maybe T-20. Make sure you get the right cabin filter, I know Amazon lists the wrong one. It's not the same as the 7L Touareg.
Either are easily accomplished with modest skill.
 
The air filter is a pain in the butt getting the bottom two tabs in just right while holding the filter in place
 
$150 to top-up brake fluid is insane. $150 to change out the brake fluid is a good price; you'd definitely want to pay that rather than doing it yourself, unless you have the correct tools and knowledge already. Even then...
At any rate, DOT 4 fluid is DOT 4 fluid. As long as it comes from a new, sealed container labeled "DOT 4 Brake Fluid", you're good. If it makes you feel better, pick the color/brand that works for you.
oh sorry, one more, can I order quality or the original Brake fluid and add it myself?
they want to charge me $ 150 for that.
 
If it's flushing the system, it's actually a decent price. If you plan on hanging onto the vehicle for a long time and doing your own maintenance, you can invest in tools you need to do it yourself, but you'll spend more than $150 unless you have the bulk of the tools already- Jack stands, factory repair manual, power bleeder kit, brake pedal holding rod, brake fluid catch bottles, wrenches off the top of my head. VCDS cable may be required too- I don't think it's needed on yours for brakes, but it's very handy for alot of other tasks on the Touareg.
Yes, I believe it is flushing the system.
