As for rattles in my Touareg, the front portion of my cockpit cabin is very quiet. Th center console used to make some noise, but I punched one day that my Mediterranean blood got the best of me, and it's gone now.

The rear is an other story. It's either the rear seat back or the rear hatch lid(or window) that makes a brief deep rattle sound over bumps, and takes away the magic of an other wise very solid vehicle. One day, I'd like to have someone drive it, while I go sit back there, and investigate thoroughly.
I did notice over the coldest days in the winter, that the first five minutes of running warm air, through the vents and defrost outlets, that the dash would make some racket, in the form of "creaking," as the plastics would expand from sub zero to eventually room temperature. I think that this is the first vehicle that I have ever owned that has exhibited this type of "behavior." That creaking sound gave me th eimpression that the plastics had become brittle or too dry. This summer, I'm going to constantly "feed" that dash with various mixtures and compounds, and see if that eventually improves things. I just can't help but wonder, if I had owned this Egg from brand new, if it would be still doing this. My Passat which I have owned since new, hence having taken care of and "fed it" since day one, is quiet QUIET and I mean not one creak.
