I'm looking at downgrading to 18" wheels so i can get a more off road orientated tread... I have 45 profile tires right now and was wandering what profile tires i should get on the 18" wheels.

I don't want it to look like a monstertruck and was thinking about 65's maybe general grabbers or bf goodrich all terrain tires...

correct that - prob 55's even 60's look huge - unless it's the width makign them look big!
 
255/55 R18 is the factory size, I run a toyo open country A/T in that size on my V8 and they are good offroad. It sounds like you don't want to go bigger than stock, I would say for offroad, the toyo's or the nitto's are really good.

Are they ok on road - to be honest that's where my car spends 90% of it's time (despite the fact i like to think otherwise!)

My toyo's are great on road, our touareg spends most of its life on the freeway, and they are quite and seem to be wearing very well, I have 15k miles on them and no noticeable change in the tread. They are really good tires.

I notice the 18" wheels are a bit narrower than the 19" - will i need spacers or anything?
 
Nope, no spacers needed, just make sure you have the tire pressure sensors in the tires installed properly in the new rims, that or you can program your car so that you can turn the TPMS off completely, PM if you'd like to know how to do that.

I see you're from tahoe - my twin is over from the UK next month and we were thinking of going skiiing there - or utah - hence the need to get rid of the 19" conti's.

Thank you, its Offroad Gray. If your looking for snow, we've got a ton of it up at my house in Tahoe this year!!! Tahoe is amazing and if you get a chance I would say definitely bring you brother out!! Where do you live exactly?

Might be - they do have scuff marks that might or might not be polishable...

Evan Hughes has some 19's for sale too ;)
