I have very good luck with Oxiclean Upholstery Cleaner. I spray a small amount onto a "soft toothbrush" and gentle go around in circles. This has cleaned up ketchup, bbq sauce, and who knows what on several of my (new to me) cars headliners. You will start to see the stain go away. At that point I dab it with a clean cloth towel. For tougher stains, repeat process.

I bought a steam cleaner from Target and its worked well with the carpets and parts of the headliner.
