I'd bet it'll be slightly more in the V10, but my 2005 V6 40K was $599.95 @ Bud Brown here in KS. I also had the brake fluid service (which still seems ridiculous) @ $99.95. I had a coupon for 15% off and it was right at $600 after tax. I also had the TSB on the coil packs done (replaced 2). Ol' Blue is running like a new pup, noticeably quicker and smoother after the big service. Plus they cleaned her up real nice!

Nothing special that could really justify the cost EXCEPT the full system inspection and checking by their SR Tech. Our warranty was about to expire so I figured this is my chance to have them do anything under warranty and to prevent me coming back in two months with a significant repair issue and hearing "we'd have seen it if only we'd done your 40K".... They actually ended up taking care of a couple things that I hadn't even noticed so my cost was actually pretty fair.

I assume you mean "Senior" tech?

Is it a common practice to have a senior tech work on these major service intervals?

The base is oil change, tire rotation, air filter(s), pollen filter, and multi point inspection.
It is suggested to also do a brake flush at the same time, which some places may include in their price.

I presume the SR Tech doing the inspection & tune work would depend on the shop, Bud Brown is a smaller dealership so they have thus far routed all the Touareg work (at least for us) to a guy with enough experience to at least make me feel like I didn't waste 600 bones.
